Black pork is NOT black
Food experience in South Korea is one of the many “must do” in the bucket list of every tourist. Especially in Jeju Island where you can find the rare kind of pork which they call “Jeju Black Pig” or “흑돼지 Heukdwaeji” in Korean. Here are the 3 things about Jeju Black Pig, also known as the Wagyu version of Pork, that you have to experience yourself.
A pork like no other
People in Jeju and most tourists claim that this is the best pork in Korea. Usually, the black pig’s meat is grilled in thick pieces over charcoal or the traditional way in old houses, over a burning hay. The smoke from the charcoal or burning hay penetrates inside the red meat which results into a unique flavor unlike the ordinary pork barbecue.
Most tourists think that the Black Pig in Jeju has black meat—-wrong! The name refers to the hair of the pig not the meat. The raw meat color is just really bright red, making it look more like a beef steak.
It is noticeably darker in color compared to the regular pork meat. More commonly served than your regular samgyeopsal is the “ogyeopsal 오겹살” or 5-layered pork, the belly part of the Black Pig. It looks like a thick version of bacon strip, with 5 layers of fat and meat.
With its exotic popularity, there are restaurants who tried to imitate and claim to serve black pig pork and sell regular pork at high prices. If you’re eating an authentic black pig meat, check the skin. It should have the black spots from the black hair roots before it’s cooked. That is the only way to know if it’s the real Black pig or not.

Melt into Black Pig’s flavor
The black pork is saturated by the smoke from the grill, with the garlic at the sides to get the smokey garlicky meaty flavor. The meat is already sliced a bit so it’s easier to cut and have it portioned. While it’s being grilled and cooked, you can actually smell the aroma of the meat and garlic. As you turn the meat, you can see the caramel colored charred side which is the perfect color for the meat before you dig in it.
The strips of fat in the slice of meat melt on contact with the hot grill, it’s not the typical pork fat belly, as there are leaner meat and thinner fat. The skin crisp just right, and the meat is cooked to a chewy texture, oozing with juices. A perfectly grilled and seasoned pork has its surface glistening on its own fat juices. The taste is more meaty and juicy than the ordinary pork meat.
When you first try to eat the Black Pig’s meat, try eating it alone without any seasoning or side dishes. You’ll feel the burst of flavor in your mouth once you eat it. Juicy on the outside and the oozing flavor that would delight you on the inside.
On the other hand, there’s no wrong way to eat this pork. You can wrap it with those classic greens, like lettuce, perilla leaves, or even kimchi, with a slice of radish (쌈무) or some spring onions. Dip the grilled pork into seasoned bean paste ssamjang or salted sesame oil and pop them into your mouth. Mixing the meat with other sidings would definitely make it more flavorful.

If you really want to experience the unique culture and authentic feels of Jeju’s black pork culture, you should visit Jeju island and look for restaurants that serves authentic Jeju black pork. There is no better place in Korea to try the authentic black pork other than in Jeju Island. In downtown Jeju City, there is a special place called Heukdwaeji Geori 흑돼지거리 or Black Pork Street where all restaurants lined up serving black pork.

On our first visit in Jeju Island during spring season, we had a sumptuous dinner at Neulbom Heukdwaji 늘봄흑돼지, a massive two-storey specialty restaurant serving authentic black pork in Jeju City. We had to wait around 15 minutes to get seated in this crowded restaurant.
